Chust oshi has been state-registered as a geographical indication, the Intellectual Property Agency reported.
Chust, one of the oldest areas of the Fergana Valley, is famous not only for its handicrafts but also for its unique traditions of preparing pilaf. Cooking osh in this region is considered a culinary art that embodies centuries of experience, skill and national values.
Chust oshi is mainly prepared outdoors, over high heat, in aluminum cauldrons. The dish’s distinctive dark golden-brown color is achieved without artificial coloring, as a result of frying bone-in meat and onions over high heat.
The region’s unique microclimate, the meat of black rams fed with wormwood and mountain herbs, and the naturally soft spring water of the Gavasoy and Kosonsoy basins contribute to the distinctive taste and quality of Chust oshi.
Granting Chust oshi the status of a geographical indication provides legal protection for its name and traditional preparation technology.
At the same time, this status guarantees that the product’s quality complies with state standards established for food products and expands opportunities to promote the region’s gastronomic brand internationally.
Today, Chust oshi plays an important role in developing gastronomic tourism, supporting local entrepreneurship and introducing Uzbek national culture to the world.
For reference, a geographical indication is an intellectual property object that confirms a product’s connection to a specific region and shows that its quality and reputation are closely linked to the natural and social factors of that area.
Earlier, Andijon devzira oshi was also state-registered as a geographical indication.
